High Fiber, High Protein Banana Bread

Ingredients:

  • 2 ripe bananas
  • 2 tsp honey
  • 1 tsp vanilla extract
  • 1/3 cup sugar-free applesauce
  • 2 eggs
  • 1/3 cup milk
  • 4 tbsp ground flaxseed
  • 2 cups chocolate chip Kodiak Cake pancake mix 

 

Directions:

  1. Start by mashing bananas in a large bowl until slightly chunky. 
  2. Add remaining ingredients and mix well.
  3. Pour into greased loaf pan or muffin pan.
  4. Bake at 375 degrees for 30-40 minutes. (Cooking time may vary for muffins.)
  5. Let cool 20-30 minutes before cutting.
  6. Makes 12 servings.
