Ingredients:
- 2/3 cup oats
- ½ cup peanut butter (or almond butter)
- ½ cup dark chocolate, chopped
- 3 tablespoons chopped nuts
- 1 tablespoon coconut oil
Directions:
- Line a baking sheet with parchment paper and set aside.
- Mix the oats, peanut butter, and chopped nuts in a large bowl.
- Melt the dark chocolate and coconut oil in a separate bowl or saucepan and stir.
- Add the chocolate mixture into the peanut butter mixture and stir.
- Add the resulting mixture to the parchment paper, one tablespoon at a time.
- Refrigerate for at least an hour and enjoy! (Note: Cookies will melt at room temperature.)
