No-Bake Chocolate Cookies

Ingredients:

  • 2/3 cup oats
  • ½ cup peanut butter (or almond butter)
  • ½ cup dark chocolate, chopped
  • 3 tablespoons chopped nuts
  • 1 tablespoon coconut oil

 

Directions:

  1. Line a baking sheet with parchment paper and set aside.
  2. Mix the oats, peanut butter, and chopped nuts in a large bowl.
  3. Melt the dark chocolate and coconut oil in a separate bowl or saucepan and stir.
  4. Add the chocolate mixture into the peanut butter mixture and stir.
  5. Add the resulting mixture to the parchment paper, one tablespoon at a time.
  6. Refrigerate for at least an hour and enjoy! (Note: Cookies will melt at room temperature.)
